Spread holiday cheer with every sip of this Christmas cocktail created exclusively for Qantas by our Rockpool Mixologists! Salut!

For the syrup (makes 1 litre)
2 lt water
15 cinnamon quills
1.5 tbsp cloves
3 tbsp smashed cardamom pods
¾ cup castor sugar
1.5 cups golden syrup

Measure all ingredients except golden syrup into saucepan

Bring to the boil and simmer for 3-4 hours until reduced by half

Add golden syrup and stir until dissolved

Leave to cool

 

To make the Christmas cocktail
Serves: 1

45ml Qantas Christmas syrup
90ml sparkling wine
1 mint sprig
½ strawberry

Measure liquids into a rocks glass

Fill with ice

Garnish with mint and strawberry
