I simply can’t go past Rockpool because, quite simply, it serves the best steaks in Perth. Properly sourced and well-aged, all the steaks are immaculately cooked and rested. But my favourite – the 80-day dry-aged rib eye on the bone, cooked with a charry, salty crust – is bovine heaven. And the way that they serve their bearnaise – all light and aerated, takes tarragon-flavoured fat to a new level…
